I’ve been drinking matcha for over 10 years, and this drink has become my summer favourite alongside the classic matcha latte. We use fresh strawberries instead of strawberry syrup or jam. So much tastier!!

When strawberries are in season, you have to try this combination. 🍓🍵

And the best part: it’s sooo simple. You only need a few ripe strawberries and good matcha.

Fancy trying this strawberry matcha at home?

Ingredients for one glass

Preparation time: 5 minutes. Makes: 1 glass.

For the strawberry layer:

  • a few fresh strawberries (or frozen, slightly thawed)

For the matcha shot:

To finish:

  • 150 ml milk of your choice (oat, coconut or almond)
  • Ice cubes

Preparation, step by step

If you’re using a chasen (bamboo whisk), soak it in warm water for about 30 seconds first. Trust me, this is sooo important. The fine bamboo bristles are brittle when dry and can break. If you don’t have a chasen, just skip this step. I’ll show you alternatives further down. 💚

First wash the strawberries, remove the tops and purée or crush them with a fork or cocktail muddler.

Sieve 3 g of matcha into a matcha bowl or a small bowl.

Start with just a small splash (about 10 to 15 ml) of the water at 70°C, not boiling, and stir the matcha into a smooth, dark green paste. Once there are no lumps, add the remaining water until you have about 50 ml. Then whisk with the chasen for about 30 to 60 seconds, ideally sideways in M-shaped or W-shaped movements rather than circles, until a fine foam forms: microfoam. 🍵

Spread the strawberry purée across the bottom of your glass. This is your pink layer. Then fill the glass generously with large ice cubes. Large cubes melt more slowly.

Now slowly pour 150 to 160 ml of milk over the ice.

Carefully pour your matcha on top so the layers remain visible.

Give it a quick stir with a straw before drinking. And enjoy it promptly: iced matcha tastes best before the melting ice dilutes it.

Which milk works best?

Oat milk or coconut milk is my first choice for this drink. Oat milk is naturally slightly sweet and creamy. Coconut milk is the summer option, with a tropical note that goes so well with strawberries. My tip: Yoli loves mixing Alpro Barista Coconut with Oatly Barista. 🥥💚

The cold-whisk alternative for a creamier version

Instead of water at 70°C, mix the matcha with cold milk. It’s even more important to soak your chasen in warm water for 30 seconds first. Here’s how: whisk 3 g of sieved matcha with about 50 ml of cold milk until frothy. Cold milk takes a little longer to whisk free of lumps, but the matcha becomes even creamier. I love it! 😍 Then prepare the glass with strawberries and ice, pour in about 140 ml of milk and slowly add the matcha on top.

Our matcha for your strawberry latte

At Sensual Matcha, we made our Ceremonial Blend specifically for drinks like this. It comes from Aichi in Japan, from the first spring harvest, and blends three cultivars: Okumidori, Yabukita and Saemidori. This combination makes it creamy and mild rather than bitter. 30 g makes about 10 lattes. Ceremonial Blend is €33. 🍓
